Grilled Oysters with Fennel Butter
A smooth, aromatic, anise flavour.
Prep time 5 mins. Cook time 5 mins
24 freshly shucked oysters, served in their half shells
225g of butter, softened
1 tbsp minced shallots
1 tbsp chopped fennel greens
1 tsp ground fennel seeds
1 tsp freshly ground black pepper
½ tsp salt
Pre-heat grill to high heat.
In a small bowl, blend together the butter, shallots, fennel greens, fennel seeds, pepper and salt.
Shuck 24 fresh oysters, and place them on the simplyshuck Oyster Tray.
Top each oyster with half a teaspoon of fennel butter.
Place tray under grill and grill for 4-5 minutes, or until the edges of the oyster meat curl slightly.
Serve on the same tray
Tip: The fennel butter can be frozen for up to one week. When ready, use only at room temperature. Any fennel butter that's left can be spread on toast triangles as an accompaniment.
