Grilled Oysters with Herb Butter
Smooth rich butter flavour counteracts the briny taste of the oyster. Always a hit!

16 freshly shucked oysters, served in their half shells
3 tbsp extra virgin olive oil
3 tbsp unsalted butter
1 clove garlic, finely minced
1 tsp lemon juice
1/2 tsp chilli pepper flakes (or substitute with Tabasco Red Pepper Sauce)
1/4 tsp salt
1 tbsp finely minced parsley
Cracked black pepper to taste
Pre-heat grill to high heat (180 degrees C)

Add the olive oil and the butter.
Add the garlic and sauté until fragrant, about 30 seconds.
Add the lemon juice, chilli pepper flakes, salt, pepper and parsley.
Turn off heat.
Shuck 16 fresh oysters, and place them on the simplyshuck Oyster Tray.
Spoon a little sauce over each oyster.
Pre-heat oven. Grill for 4-5 minutes or until the edges of the oyster meat curl slightly.
Serve on the same tray.
