An Australian classic dish that’ll convert the oyster-wary to an oyster lover!

12 freshly shucked oysters, served in their half shells
2 tbsp Worcestershire sauce
4 tbsp balsamic vinegar
2 tbsp butter
Dash or two of Tabasco
1 tbsp vegetable or canola oil
2 rashers of smoked bacon, rindless, finely sliced
In a small pan, gently heat Worcestershire sauce, balsamic vinegar, butter and Tabasco.
Stir until combined, then remove from heat and set aside.
Heat oil in frying pan and fry bacon slices until crispy. Transfer to a paper towel to drain.
Shuck 12 fresh oysters, and place them on the simplyshuck Oyster Tray.
Spoon a little sauce over each oyster, then top with a scatter of diced bacon.
Pre-heat grill. Grill for 50-60 seconds.
Serve on the same tray.
