A simplified version of this famous American dish for speed and convenience.

12 freshly shucked oysters, served in their half shells
1 small onion, finely diced
2 tbsp chopped fresh parsley
4oz spinach, chopped
4oz fine breadcrumbs
Preheat grill to high setting.
In a small frying pan, melt butter and fry onion and parsley for 2-3 mins until softened.
Add the spinach and cook until wilted.
Shuck 12 fresh oysters, and place them on the simplyshuck Oyster Tray.
Top each oyster with a teaspoon of spinach and onion mixture.
Next, add a sprinkle of breadcrumbs, followed by a sprinkle of Parmesan cheese.
Then add a small lump of butter on top of the Parmesan cheese.
Grill to cook until golden-brown, approx 10 mins.
Serve on the same tray.
