Oysters with a Summer Salsa

Recipe by Simply Oysters

A wonderful starter to a BBQ.  Looks and tastes like summer in a shell!

Prep time 15 mins

12 freshly shucked oysters, served in their half shells
1 medium tomato, deseeded and finely chopped
4 tbsp finely chopped, peeled cucumber
4 tbsp finely chopped gari (pickled ginger, usually served with sushi)
4 tbsp mirin (Japanese sweet rice wine)*
4 tbsp ponzu (citrus based Japanese soy sauce)**
4 tsp finely chopped coriander
4 tsp toasted sesame oil

Combine all ingredients in a small bowl and season to taste.

Shuck 12 fresh oysters, and place them on the simplyshuck Oyster Tray.
Top each oyster with a spoonful of salsa to taste.
Serve on the same tray.

* Instead of mirin, you could use 1-2 tbsp to ½ cup white wine, vermouth or dry sherry.
** Instead of ponzu sauce, you could use lime juice to soy sauce.
