The pan-fried bacon and roasted red pepper adds texture and fullness of flavour to the hot and briny oysters. These mini delicacies are sure to be popular!
Prep time 10 -20 mins
12 freshly shucked oysters, served in their half shells
2 slices of bacon
4 tbsp red pepper (finely chopped)
2 tbsp unsalted butter
1 tbsp lemon juice
1 tbsp shallots (finely chopped)
Salt and pepper to taste
Preheat over to 200 degrees.
In a pan, heat bacon until cooked, but not crispy. Transfer cooked bacon to a plate to cool. Then finely chop the bacon.
In a small bowl, use a fork and mix the red pepper, butter, lemon juice and shallots.
Shuck 12 fresh oysters, and place them on the simplyshuck Oyster Tray.
Top each oyster with a spoonful of sauce to taste.
Place the tray of oysters into the oven for about 10 minutes or until the butter bubbles.
Serve while hot.
