Pan-fried Oysters

hot, crunchy, succulent and delicious bite!
Prep time 10 mins. Cook time 5 mins
12 freshly shucked oysters, served in their half shells
4-6 tbsp flour
1-2 eggs, beaten
1 cup of panko (bread crumbs) seasoned with salt and freshly ground pepper
2-3 tbsp vegetable oil
Shuck 12 oysters and place them in a colander to drain
Place the oysters' half shells on the simplyshuck Oyster Tray.
Pat oysters dry with kitchen paper and dust with flour.
Dip floured oysters in beaten eggs, then in the seasoned bread crumbs - coat each oyster thoroughly.
Heat vegetable oil in a thick bottomed frying pan until quite hot.
Fry oysters until golden brown on one side, 1-2 minutes, then carefully turn over.
Fry other side until golden brown, another 2 minutes. Don't overcook.
Remove from the pan and return the cooked oysters to their half shells on the simplyshuck oyster tray.
Serve on the same tray.
