Cornish Native Oysters are fished from traditional Native Oyster beds at the sub-tidal waters of the River Fal Estuary, Falmouth, Cornwall, England.

Native Oysters have been fished from the River Fal Estuary since Roman times. Governed by ancient laws, Cornish Native Oysters may only be fished from the Port Truro Oyster Fishery from October to March by licensed fishermen, who must use sail or oar vessels, and haul their catch aboard by hand or hand winch. No motor or mechanical power is allowed.

Freshest oysters possible
Cornish Native Oysters remain at the River Fal Estuary, from seed until harvested for market.

Once harvested, these oysters are cleaned and purified in natural seawater, packed live to order in boxes, and dispatched by the oyster fishery's depuration and dispatch centre (Monday to Thursday), for next day courier delivery to our clients' addresses in mainland UK (Tuesday to Friday).

Store and consume
Store oysters in the fridge and consume within five days from delivery. Oysters can be consumed raw or cooked.

Shell cup depth: Medium.

 

Brininess: 5/10.

 

Meat to shell ratio: 9/10.

 

Meat: Plump, firm.

 

Succession of flavour notes:

1. Light sea salt.

2. Melon, lettuce, cucumber.

3. Copper.

Since Roman times, Cornish Native Oysters have been fished from the River Fal Estuary, near the seaside town of Falmouth, Cornwall, England.

 

The River Fal catchment area can be described as the Truro Port Fishery, which covers an area of 2,721 acres, and includes all parts of Truro and Falmouth Harbours and the bed of Truro, Fal and Tresillian rivers.

 

Governed by ancient laws to ensure the sustainability of Native oyster stocks, Cornish Native Oysters from the Truro Port Fishery may only be fished from 1 October to 31 March, by licensed fishermen (licenses are valid for one season only). These fishermen may fish at certain times (from 9 am to 3 pm Monday to Friday; and from 9 am to 1 pm Saturday); must haul in their catch by hand or winch; and must use sail or oar vessels.No motor or mechanical power is allowed. This is the only fishery in the world where such traditional methods must be used.

 

Fishermen must use their experience and rely on the winds and tides. To fish for Cornish Native Oysters, the fishermen must tow their small oyster dredges across the seabed by sail or oar; then haul their catch aboard by hand or winch, sort their catch on board, and retain Cornish Native Oysters of market size.

 

Cornish Native Oysters take 48 to 60 months to reach market size.

 

Cornish Native Oysters are featured on menus at top oyster bars, restaurants, and hotels in the UK.

 

The Falmouth Oyster Festival is held at the seaside town of Falmouth in October each year. This popular festival attracts tens of thousands of people, who enjoy oysters, local food and drink, live music, entertainment and activities.
