Whitstable Native Oysters are fished from traditional Native Oyster beds at the sub-tidal waters of Whitstable Bay, Whitstable, Kent, England.

Native Oysters have been fished from Whitstable Bay since Roman times.

First established as a cooperative in 1793, the Whitstable Oyster Company is world famous for its "Whitstable Oyster", which is a protected food name with PGI (Protected Geographical Indication) status. This scheme protects regional foods whose origin and authenticity are assured.

Available: Seasonal - 1 September to 30 April each year.

Freshest oysters possible
Whitstable Native Oysters remain at Whitstable Bay, from seed until harvested for market.

Once harvested, these oysters are cleaned and purified in natural seawater, packed live to order in boxes, and dispatched from the oyster farm's depuration and dispatch centre (Wednesday to Thursday), for next day courier delivery to our clients' addresses in mainland UK (Thursday to Friday).

Store and consume
Store oysters in the fridge and consume within three days from delivery.

Oysters can be consumed raw or cooked.

Shell cup depth: Medium.

 

Brininess: 6/10.

 

Meat to shell ratio: 7/10.

 

Meat: Plump, soft.

 

Succession of flavour notes:

Established as a cooperative in 1793, Whitstable oyster farm covers an area of inter-tidal waters at Whitstable Bay, near the seaside town of Whitstable, Kent, England.

 

Whistable Bay is part of the Swale River Estuary. At the shallow tidal waters of the Swale River Estuary, the freshwater of the Swale River mixes with the saltwater of the North Sea. The Swale River is a Designated Special Protection Area and a National Nature Reserve.

 

Native Oysters have been fished off Whitstable since Roman times. The name 'Whitstable Oyster' has Protected Geographical Indication status. This protected food name and scheme covers regional foods whose authenticity and origin are assured.

 

The Whitstable Oyster Company owns the Whitstable Oyster Fishery Company Fish Restaurant; several other restaurants; a hotel; and a cluster of 150 year old fishermen's huts converted to luxury accomodation on the beach front with views of the Thames Estuary.

 

Whitstable Pacific Oysters take 24 to 36 months to reach market size. Whitstable Native Oysters take 48 to 60 months to reach market size.

 

Whitstable Pacific and Native Oysters are featured on menus at a top restaurants in Whitstable and overseas.

 

The Whitstable Oyster Festival is held at the seaside town of Whitstable in July each year. This popular festival attracts tens of thousands of people, who enjoy oysters, local food and drink, live music, entertainment and activities.
